The Luxury Editor Joins the Launch Night of COBA – a Restaurant in the Heart of Bangkok Set to Redefine Experiential Fine Dining

The thriving gastronomy scene in Bangkok (read our guide here) is being enhanced further with the launch of COBA. Having officially opened on the 7th of November 2024, COBA offers a bold reimagining of fine dining, blending immersive culinary artistry with dynamic entertainment in a unique, rainforest-inspired setting and The Luxury Editor’s Simon was one of the first to discover what’s on offer at their launch night.

COBA’s culinary vision is spearheaded by Chef Olivier Limousin, a celebrated Michelin-starred chef known for his avant-garde approach to gastronomy. Having relocated from New York, Limousin’s creative genius sets the tone for COBA’s distinctive experience. Supporting him is Executive Chef Sebastien Lalanne, whose expertise in French cuisine and Michelin-starred kitchens around the world brings a refined yet inventive touch to the menu. Together, they craft a multi-sensory dining journey designed to tantalise and surprise.

At the heart of COBA’s offering is a tapas-style tasting menu that fuses Latin American flavours with French techniques. Signature dishes include the Tapas Tower, a curated selection of seafood delights like tuna tataki, confit scallops with umeboshi, and wagyu tartare. Other standouts feature daring flavour combinations, such as humita gyoza with Joselito Iberico ham.

COBA’s appeal extends beyond the plate. Its rainforest-inspired interiors, characterised by rich textures and vibrant contrasts, create a visually captivating space. The ambience is further enhanced by a lineup of immersive performances, ensuring guests are treated to a holistic experience where dining meets entertainment.

With its captivating interior, half-mahogany elegance, half hanging garden of Babylon, Coba wows from the offset. There’s so much foliage hanging from the ceiling, it’s practically like dining in the Amazon and establishes a heady and hermetic atmosphere which seals the diner in its unusual and unique world. Brainchild of Michelin-starred Olivier Limousin, helmed by chef Sebastien Lallane, food is flawless.”

“Expect caviar on blinis, sea bream ceviche, cauliflower hummus, black cod with yuzu sauce and much, much more. Also expect a few alcoholic shots, interspersed throughout the evening, where haute couture-dressed dancers act as palate-cleansing cabaret. Our night was a hedonistic blur in the best possible way.
